Ingredients:
3-4 big red potatoes, cubed
2 tsp fresh cracked black pepper
1/4 tsp garlic powder
1 tsp salt (for boiling water)
1 tbsp dijon mustard
1 medium jalapeno, seeded and minced
1 hearty stalk green onion, chopped
1 tbsp butter
1/2 cup milk
1/4 cup shredded parmesean cheese
- Set medium pot filled with enough water to cover the potatoes, add salt, set heat to high and cover.
- Meanwhile, chop the potatoes into quarters.
- When boiling, add potatoes. Boil 15-20 minutes until potatoes are fork tender.
- Drain, return to pot. Mash, adding ingredients one by one while keeping the heat on very low. Only add salt to taste!
Serves about 4-6 :) depending on the scoop... I love jalapenos, but this is a must try even without them. Delicious!!
