Lemon Basil Olive Oil

I think this is wonderful on anything! I love it on basmati rice with baked salmon and sauteed vegetables. It could be a dressing, a drizzle, or a marinade! The sky is the limit with this fragrant condiment! :)




Ingredients:

1 1/2 cups fresh basil
2/3 cup good olive oil
1 tsp table salt
1 tsp ground black pepper
juice from 1/2 lemon, plus zest
1 large clove garlic
1 clove shallot
1 1/2 tbsp white vinegar




  • Chop garlic and shallots so it blends easier.
  • Place all ingredients in blender, adding oil slowly until all blended.
  • Adjust seasonings to taste before serving.




Store in the fridge up to 1 week! :) Enjoy this simple, delicious accompaniment.
